Hervirlas hasta que esten tiernas, retirar y pasar por agua fria y colar. Luego mezclar las papas con el jamon tambien cortado en dados. Hervir la leche con la manteca y cuando rompa el hervor añadir almidon de maiz diluido en 1/2 taza de leche fria. Revolver bien y cocinar 3 minutos. Condimentar con sal, pimienta y nuez moscada. Retirar y agregar la yema. Enmantecar una fuente de horno y colocar la preparacion de papas intercalada con la salsa y espolvoreando con el queso rallado. Terminar con salsa y queso rallado. Gratinar en horno fuerte 25 minutos.
